THE VINSANTO Vin Santo Caratello is only made during the best years. The grapes (Trebbiano, Malvasia and Sangiovese) are hung from rafters to dry from the harvest until December. Vin Santo is sealed into "caratelli" for a long time, ranging from a minimum of six years to a maximum of ten, and only then is it bottled.
